Fall is the time of year when our Texas state tree sheds its pecans just in time to harvest and make a spicy treat. Notable health benefits of pecans come from their unsaturated fat and fiber content. Additionally, pecans are high in polyphenols with antioxidant effects.

Spicy Texas Pecans
Preparation time: less than 30 minutes
Number of servings: 16
- 2 tablespoons of unsalted butter
- 3 cups of pecan halves
- 1/4 cup of Splenda
- 1 teaspoon of paprika
- 2 teaspoons of chili powder
- 1 tablespoon of ground cumin
- 1/4 cup of apple cider vinegar
Directions
- Preheat your oven to 325 degrees Fahrenheit
- Melt the butter in a large skillet over high heat
- Add pecans and sauté until lightly browned, about 3 minutes
- Add Splenda and stir until it caramelizes, about 3-5 minutes
- Stir in paprika, cumin and chili power
- Add vinegar and cook until all the liquid has evaporated
- Spread the pecans on a cookie sheet and bake in oven until crisp, about 3-5 minutes
- Take out of oven, lightly sprinkle salt if desired
