Ingredients
- 6 hard-cooked boiled eggs, cooled and shelled
- 3 tablespoons of grated Manchego or cheddar cheese
- 1 to 2 tablespoons of mayonnaise
- 2 tablespoons of snipped fresh chives
- 1 fresh red chili, seeded and finely chopped
- Salt and pepper
- Lettuce leaves to serve
Directions
- Cut the eggs in half, lengthwise. Then, using a teaspoon, carefully scoop out the yolks into a fine strainer. Reserve the egg white halves.
- Rub the yolks through the strainer into a bowl and add the grated cheese, mayonnaise, chives and chili. Add salt and pepper to taste.
- Combine the mixture and spoon the filling into the egg white halves.
- Arrange a bed of lettuce on individual serving plates and top with the eggs. Cover and chill until you are ready to serve.
