University Health endocrinologist Dr. Vidhya Illuri said she started Dr. Illuri’s Pantry "to share healthy recipes with my patients.”
“Food is medicine!” Dr. Illuri said. “When we choose to use healthy food to fuel our bodies it often reduces the need for medications. I love to cook, and I want to show my patients that eating healthy doesn’t have to be tasteless or boring, it can be delicious!”
Try Dr. Illuri’s kale blueberry salad and add a flavorful side to your new year.
Blueberry kale salad
4 cups chopped kale
4 tablespoons almond slivers
4 tablespoons goat cheese
1 cup blueberries
lemon dressing
Lemon Dressing
¼ cup avocado oil
Juice from ½ lemon
3 teaspoons coconut aminos (a healthier alternative to soy sauce)
Salt and pepper
Steps
Whisk lemon dressing ingredients.
Tear off the leafy greens from the stem of the kale.
Add lemon dressing to kale.
Massage kale by rubbing the dressing into the leafy greens until they slightly wilt.
Toss in almonds and blueberries.
Top with goat cheese.
